Loaded Sweet Potatoes

This sweet potato recipe is a bit unexpected, but let me tell you that the combination of flavors is AMAZING.   I came across a similar picture on Pinterest and then put this together based on what I had in my kitchen at the time.  Since then I’ve eaten it several more times, and it’s pretty much becoming a weekly staple.  Eric recently tried it and actually liked it too!  Another thing I love about this recipe is that it is meatless.  It’s so great to have a meatless meal every now and then because it really helps to stretch that grocery budget.  You are still getting protein from the beans and the Greek yogurt and this meal is surprisingly filling, even without the meat.

 

Ingredients:

1 large sweet potato

Butter (use real butter, I beg you!)

Salt

Pepper

black beans, rinsed and warmed

1-2 stalks of green onion, chopped

Plain unsweetened Greek yogurt (full fat is preferable)

1 avocado

Smoked Paprika

Cayenne Pepper

 

Directions:

Cook sweet potato in oven or microwave, depending on how much time you have. Cut in half and spread onto a plate mixing in butter, salt and pepper to taste.  On top of the sweet potato add black beans, sliced avocado, chopped green onions, sprinkle lightly with smoked paprika and cayenne pepper and add a GENEROUS dollop of the greek yogurt.   Your taste buds will thank you!
